Ingredients:

-2 lbs salmon (cut into four pieces)

-1 tsp salt

-1 tsp ground cumin

-1 tbs olive oil

-1 tsp onion powder

-1 tsp paprika powder

-1 tsp ground coriander


Avocado salsa

-1 avocado (peeled, seeded and also sliced)

-3 tbs olive oil

-3 mild hot peppers (seeded, diced or sliced)

-2 tbs finely sliced cilantro

-1 small red onion, chopped

-Salt to taste

-Juice from two limes

Preparation:

After mixing the coriander, salt, cumin, onion, paprika and black pepper using a personal blender, rub the salmon fillets using olive oil and refrigerate for a minimum of half an hour. The grill has to be pre-heated. After combining the onion, avocado, lime juice, cilantro, olive oil, hot pepper, and salt in a container, blend properly and chill till it is ready for use. After the salmon is grilled, serve it garnished with avocado salsa along with rice and patacones on the side.

Difficulty: Easy

Ingredients (for 4 servings)

-4 salmon (150 grams)

-400 grams snow pea

-5 tomatoes

-4 medium yellow zucchini

-Pepper

-Salt

-Olive oil

-Fresh thyme

-1 lemon (juice)

Preparation:

The oven has to be preheated to approximately 200 degree Celsius. After rinsing the snow peas, blanch them for about five minutes in boiling water. Next, rinse using cold water. After rinsing the tomatoes and cutting them in half, remove the seeds and slice into wedges. Cut the zucchinis into slices after rinsing them. Rinse the salmon fillets and sprinkle with lemon juice after seasoning them with pepper and salt. Use aluminum foil for lining a baking sheet. Place the vegetables and salmon on the sheet. After drizzling with a few tablespoons of olive oil, close the aluminum foil for making a pocket and then cook for nearly 15 minutes. Following this, cook for another 5 to 6 minutes after opening the foil. Finally, serve the salmon along with vegetables after broiling for another five minutes.

Preparation time: 20 minutes

This particular recipe is ideal for dinner, banquet as well as a snack.

Ingredients:

-400 grams salmon fillet

-1 bunch of fresh green salad

-Cucumbers (4 pcs.)

-1 bunch fresh purple basil

-Lemon (1 pc.)

-1 tsp. Brown sugar

-1 tbsp. Refined olive oil

-3 tbsp. Soy sauce

-0.5 tsp. Ground black pepper

-Salt to taste

Preparation:

After washing the salmon fillet and drying them with paper towels, cut them into pieces. Pour the soy sauce into a small container and add the brown sugar in it. Stir frequently to dissolve the sugar. After laying the salmon fillets in a pan and pouring the sauce, leave it there for approximately 10 minutes. Next, wash the cucumbers and peel as well as cut them into cubes of approximately 2 inches in length. The lemon zest has to be grated on a grater. After pouring the cucumbers into the lemon juice, sprinkle with salt, zest, and pepper. After washing and drying the lettuce, cut them up. Wash, dry, and separate the basil leaves from the stems and they must be added to the salad. Add 1 tablespoon of olive oil after mixing the greens with the cucumber. Place the cucumbers in a container along with lettuce as well as pieces of fried salmon and serve hot.

Ingredients for Tagliatelle:

-4 XL eggs

-400 grams flour

-Virgin olive oil for drizzling

-Boiling salted water

Ingredients for Sauce:

-400 grams canned salmon

-1 clove finely chopped garlic

-20 ml olive oil

-A small bunch of finely chopped spring onions

-300 ml sour cream

-100 ml vodka

-Smoked salmon strips (optional)

-2 cups fish stock (or vegetable stock or chicken stock)

-Tomato paste

-Chopped dill and chives

-Salt and pepper

Preparation:

After heating the olive oil over medium heat in a big saucepan, add some garlic and spring onions, and fry for about a couple of minutes. After adding vodka, cool it till it is reduced by half. Add some sour cream, tomato paste, and stock, and then stir frequently to blend the ingredients. Include the salmon and simmer for about two minutes on low heat. After removing the stuff from the heat, add some chives as well as dill and stir through. Cover it and set aside.

Making the pasta:

Combine the eggs and flour till the mixture appears like couscous grains. Press into a ball after turning out on a wooden board. Roll out the sheets of pasta to your preferred thickness by making use of a pasta machine and cut into tagliatelle pieces. Next, cook for about two minutes in boiling salted water.
